The fine wines from La Scolca will enhance the dining experience when matched with a cuisine created especially for the dinner by the world-class chefs of JOALI Maldives.

The Japanese-Peruvian restaurant Saoke at the resort will host a sake dinner thanks to a relationship with reputable Japanese sake breweries including Shirataki, Tochikura, and Ginrei Gassan. The first female cook in Russia to be awarded a Michelin star is Ekaterina Alehnia, founder-chef of Biologie in Moscow. With a heavy emphasis on sustainability and drawing inspiration from the idea of "circular gastronomy," Biologie aims to deliver thoughtful meals. Visitors can take pleasure in a carefully tailored experience with Chef Alehina while she is a resident at JOALI Maldives.

Theodor Falser – 15-22 November 2023

Theodor Falser, a multi-award-winning Michelin-starred chef, is no stranger to JOALI Maldives; in the past, he served as the resort's culinary consultant for Bellinis, its Italian restaurant. Throughout his illustrious career, Chef Theodor, who is passionate about wild herbs and local delicacies, has found a variety of tastes from many cultural origins. Chef Theodor will return to JOALI Maldives from 15–22 November 2023 and once more in March 2024, giving visitors the chance to once more enjoy his unique creations and designs.

Nina Tarasova – 18-25 December 2023

Chef Nina Tarasova is renowned for her confectionery skills and has more than 10 years of experience in the culinary spotlight. She received her schooling in France but currently resides and works in Russia. She frequently represents the nation at various international festivals and forums and has conducted training sessions and master classes both domestically and internationally. Nina will join the JOALI team during her visit from December 18–25, 2023, and she is sure that her culinary prowess will leave a lasting impression on the hearts and palates of all visitors.

Alex Webb – 10-17 January 2024

, a trailblazer, won Masterchef: The Professionals on BBC in 2020 after turning up a strong performance. His main tenet is that "eating should be an experience," and the presentation and creative flair of his dishes reflect this philosophy. Visitors can expect a special experience in the new year as Chef Webb arrives to guide a wonderful culinary trip that is influenced by his travels and filled with flavours from his youth.

Hidemasa Yamamoto – 20-27 February 2024

Chef Yamamoto, a native of Japan with culinary training in France and Italy, has earned numerous Michelin stars over his successful career. He has greatly influenced the menu at Saoke, the resort's celebrated Japanese-Peruvian Restaurant. His dishes are renowned for their varied flavours and rigorous attention to detail. From February 20–27, 2024, Chef Yamamoto will return to JOALI Maldives, promising visitors an extraordinary and cutting-edge mix of flavours.
