T•Pan, a new restaurant featuring classic Teppanyaki-style Japanese cuisine, has been launched by the St. Regis Maldives. The resort's culinary and beverage selections are further enhanced by the new restaurant, which debuts as the seventh dining location.
“We’re inspired by the culture of Japan and excited to introduce this truly inventive and unique concept to our valued guests. The artistic touch of presentations, theatrical performances and the apogee of the art of simplicity are imbued in the gracious art of Teppanyaki – the Japanese meaning of ‘Teppan’ for iron plate and ‘Yaki’ for cooking. This exquisite dining adventure is certain to be a favourite among novice foodies and gastronomes alike,” the general manager of The St. Regis Maldives Vommuli Resort, Vincent Pauchon, said.

Visitors to the T•Pan will enjoy the wabi-sabi Japanese Celestial Zen concept of appreciating tiny subtleties, discovering of senses, and embracing the beauty of imperfection. Omakase tasting menus will be available at the restaurant, which can seat a total of sixteen patrons at a time at its two Teppan counters. Signature dishes will include miyazaki pork loin with wild mushroom and ume sauce, shioyaki abalone with nurikuro and kinome, live scallop with uni cream sauce and myoga, Ankimo with Suehiro pnzu and albino caviar, and Hokkaido snow beef striploin with taranome and fresh wasabi. The greatest selection of gins, beer, special sample flights of whisky and wine, Japanese teas, and handmade Sake from the renowned Sake house Dassai are available for guests to delight in.

“To eat at The St. Regis Maldives Vommuli Resort is not simply a luxury experience or entertainment for the senses. It is a way of looking at the world through food that is positive, inclusive and sustainable. At T•Pan, we aim to create eco-awareness, cultural insights and local and global food sourcing to create tantalizing experiences. The future of healthy luxury travel needs and wants has arrived,” said Sunny Chuang, food and beverage director of The St. Regis Maldives Vommuli Resort.
The restaurant was created by WOW Architects and was inspired by the ecosystem of the seashore, particularly the ghost crab. While the wabi-sabi aesthetic is represented by its plain rough wood surface and simplistic beauty, the dark shadows are reminiscent of the intimate courtyards of Kyoto Machiyas, Japan's historic wooden homes. The Manta chairs at each Teppanyaki table are made specifically for the tables.

The T•Pan will be open for lunch and dinner six days a week starting December 1, 2022. Lunch will be served at the restaurant from 12:30 to 3:30. Dinner will only be provided to adults, including teenagers above the age of thirteen, from 7:00 pm to 11:00 pm. Only degustation meals with vegetarian and vegan options are offered at this establishment.
